Signature Drinks featuring Classic Champagne
I love champagne - especially at a wedding when everyone is already bubbly with excitement! What better way to serve this classic celebratory libation than to create a festive signature drink? Over the years we have created and sampled several champagne drinks. Here are our top three favorites!
T H E D R I N K S
St. Germaine Champagne Cocktail. Simple and sweet. Champagne + a splash of St. Germaine + raspberry to garnish.
Bubbly Martini. A little unexpected but downright delicious. Put a celebratory spin on a classic martini by mixing champagne + a splash of Gin into a shaker with ice. Shake. Strain into a martini glass. Garnish with Olives. Voila!
Strawberry & Thyme Spritzer. So refreshing and perfect for summer or fall. 6 ounces Lillet Blanc or blanc vermouth chilled, 2 lemon wedges, strawberries thinly sliced, a few sprigs of thyme, crushed ice + 4 ounces Prosecco or Champagne.
Champagne Margarita. Yes, you heard me right. All you need is fresh lime juice, silver tequila blanco, Triple Sec or Cointreau and champagne or sparkling pinot grigio.
Champagne Mojitos This drink is a favorite of mine and perfect for a summer wedding! It takes a little more prep than a regular mojito, but is worth the effort! It is prepared with rum and fresh mint (just like a classic mojito) but topped with a splash of champagne. The recipe is complex so I’ve included it here:
C H A M P A G N E M O J I T O R E C I P E
3/4 cup sugar, 3/4 cup water, 1 1/2 cups packed mint leaves, plus 12 mint sprigs, for garnish. 6 limes, cut into wedges, 2 cups light rum, cracked ice and 3 cups Champagne or sparkling wine.
In a small saucepan, combine the sugar and water and cook over high heat just until the sugar has dissolved. Let cool to room temperature. In a large pitcher, combine the sugar syrup with the mint leaves and lime wedges and muddle well with a wooden spoon. Add the rum and stir well. Strain the drink into another pitcher.
Fill tall glasses with cracked ice and pour in the drink, filling them about two-thirds full. Top with Champagne, garnish with the mint sprigs and enjoy!!
